Sweet Potato Butter October 20, 2009

While up in the north georgia mountains this past weekend picking apples, I stumbled upon this intriguing looking jar inside the store next to the orchard.

I don’t know about any of you, but I have never heard of sweet potato butter!  I had to have it!!

Since it’s arrival in my kitchen, I’ve had it on apple slices…

On top of my oatmeal…

On my toasted English muffins with PB…

On more apple slices with cinnamon…

And I’ve eaten it straight out of the jar.  1/3 of this jar is g.o.n.e. GONE!  :(   I should’ve bought 20 more jars of this stuff!!!  It’s amazing!!!

Plus, I got the no sugar added, so it’s only 10 calories per tablespoon! :)

It’s basically like sweet potato in jelly form.  That’s the best description I’ve got. ;)

So this week did not start out too smoothly.  Nothing big happened, just lots of little stuff kept going wrong yesterday.  But I had a much better day today!!  And fur daughter Ripsey never fails to cheer me up! :)   Isn’t she just adorable?!

We took her for her yearly check-up on Saturday, and my little piggy has gained 10 pounds in the last year!!  :(   So, we’ve already downsized her portions and I’ve taken her out for walks and runs and plan to keep it up!  I suspect she is sneaking in on our other dog Cooper’s food when we’re not looking.  She’s a food bully for sure.  She will eat anything and everything.  And I mean everything.  Maybe Ripsey should have her own “Progress” page?!?!  ;)

    That sweet potato butter looks delish. What is it made of?

      Great question! (Such a teacher!! ;) ) The ingredients listed are sweet potatoes, lemon juice, water, cinnamon, and splenda.

  5. Anything with “butter,” and I’m there!! That sounds interesting, for sure. TJ’s needs to pick that idea up!!

    Ripsey is SO cute – especially in that shirt! I’m sure with the added walks and downsizing on the food, she’ll be svelte in time for the holidays. ;-)

    That sweet potato butter looks soo good! That’s gotta be fairly easy to make, think i’ll have to google a recipe! I love sweet potatoes.. yum!! Hope your dog slims up for ya! Will you post before/after pics? ;) LOL!!!
